One week in

Today (7/30/2017) is officially my family’s 1 week Vegan anniversary. To celebrate, I am cooking sweet potatoes, beans and rice and cornbread.  And a cake! All Vegan of course.

Healthy Eating

I may mess around and try to do a mac and cheese, but I don’t know if I’m ready to tackle that. LOL

I kept a food diary all week.

Also I have lost weight! Yes in 1 week!!! Who’s excited! This girl.

I feel better. I have more energy and everything.

Now, I must be fully transparent. Although all of my lunch and dinner meals have consisted of Vegan ingredients and recipes. My breakfast has been coffee with cream and sugar and a bagel with Brie or cream cheese. HELP!!! I am working to find a tasty alternative.

  1. Instead of regular creamer use almond milk coffee creamer or coconut milk creamer. Replace your regular sugar with cane sugar, raw honey or stevia. Repalce your cream cheese/Brie with avocado with salt and pepper or guacamole. If you want something sweeter than savory use apple butter. The only ingredients it has in it are apples, cinnamon, nutmeg, cloves and sugar but it’s so good.

    1. Thank you! I will try those suggestions. I can’t have soy, so hopefully those don’t have soy. I will try the apple butter. It sounds more appetizing than avocado. 🙂
